This week’s WINNER WINNER EASY DINNER was shared by Nicole!
Nicole is from Southern California and is married to her high school sweetheart Tyler! (HOW CUTE IS THAT?!) They have a beautiful, lively 2 year old daughter who they love to take camping and fishing. She originally found this recipe on Daily Dose of Pepper, but altered it a little by using regular cream of chicken soup! Thanks for taking the time to share it with us!
It is a delicious Easy Chicken and Rice casserole. It fits ALL THREE of our categories, it is cheap, easy, and a family favorite of theirs so this one is definitely a winner!
We tried it out as well so we could offer you so tips! Below is the updated, delicious recipe with a couple of our suggestions at the bottom!
Easy Chicken and Rice Casserole
- 1 10 oz can cream of chicken soup
- 1 10 oz can water
- 1 C white rice
- 1 1/2 lbs chicken breast, chopped in pieces
- 1 packet onion soup mix, dry
Preheat oven to 350 degrees
In a large bowl wisk together cream of chicken soup, water, and onion soup mix.
Mix in rice and bite-size pieces of chicken.
Pour into casserole dish sprayed with non-stick cooking spray. Cover with foil and bake for 1 hour.
Here are a few of our suggestions:
*Make sure that you stir the rice well so it is not stuck at the bottom of the casserole dish so it does not burn to the bottom.
*If you’re feeding a small family, divide the mixture between two casserole dishes and freeze one so you have a last-minute dinner on hand. If you have a large family, double it and do the same. After thawing, re-warm in the oven covered with foil until warm all the way through.
* Don’t skimp on the water, no one wants to crunch hard, dry rice in their teeth!
