Ingredients 

Main Ingredients

  • 2 cups Sweet Potatoes, diced
  • 1 can Chickpeas, drained and rinsed
  • 1 cup Coconut Milk
  • 1 cup Diced Tomatoes
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Curry Powder
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt
  • 1 tablespoon Olive Oil
  • 1 cup Vegetable Broth

Instructions 

  1. 1. Heat olive oil in a pot over medium heat. Add chopped onions and cook until translucent.
  2. 2. Add minced garlic and cook for another minute.
  3. 3. Stir in curry powder, ground cumin, and ground coriander. Cook for another minute.
  4. 4. Add diced sweet potatoes, chickpeas, diced tomatoes, coconut milk, and vegetable broth. Bring to a boil.
  5. 5. Reduce heat and simmer for 20-25 minutes, or until sweet potatoes are tender.
  6. 6. Season with salt to taste. Serve hot.
