Ingredients 

Main Ingredients

  • 6 ripe tomatoes, chopped
  • 1 cucumber, peeled and chopped
  • 1 red bell pepper, chopped
  • 1 small red onion, chopped
  • 2 cloves garlic, minced
  • 3 tablespoon olive oil
  • 2 tablespoon red wine vinegar
  • 2 cups tomato juice
  • to taste salt and pepper

Instructions 

  1. 1. Combine tomatoes, cucumber, bell pepper, onion, and garlic in a blender.
  2. 2. Blend until smooth.
  3. 3. Add olive oil, vinegar, and tomato juice. Blend again.
  4. 4. Season with salt and pepper to taste.
  5. 5. Chill in the fridge for at least 2 hours before serving.
