  • 1 cup rhubarb, diced
  • ¼ cup sugar
  • 1 tablespoon lemon juice
  • 1 loaf baguette, sliced
  • ½ cup ricotta cheese
  • 2 tablespoon honey
  • 1 tablespoon fresh mint, chopped

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a mixing bowl, combine strawberries, rhubarb, sugar, and lemon juice. Let sit for 10 minutes.
  3. Arrange baguette slices on a baking sheet and toast in the oven for 5-7 minutes, until golden brown.
  4. Spread ricotta cheese on each toasted baguette slice.
  5. Top with strawberry rhubarb mixture, drizzle with honey, and sprinkle with chopped mint.
