Strawberry Rhubarb Crostini

Main Ingredients
- 1 cup strawberries, diced
- 1 cup rhubarb, diced
- ¼ cup sugar
- 1 tablespoon lemon juice
- 1 loaf baguette, sliced
- ½ cup ricotta cheese
- 2 tablespoon honey
- 1 tablespoon fresh mint, chopped
Preheat oven to 375°F (190°C).
In a mixing bowl, combine strawberries, rhubarb, sugar, and lemon juice. Let sit for 10 minutes.
Arrange baguette slices on a baking sheet and toast in the oven for 5-7 minutes, until golden brown.
Spread ricotta cheese on each toasted baguette slice.
Top with strawberry rhubarb mixture, drizzle with honey, and sprinkle with chopped mint.
