Ingredients 

Main Ingredients

  • 1 cup quinoa rinsed
  • 2 cups vegetable broth
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 red bell pepper chopped
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 cup frozen peas
  • 1 lemon juiced
  • to taste salt and pepper
  • 2 tablespoon olive oil

Instructions 

  1. 1. Heat the olive oil in a saucepan over medium heat.
  2. 2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. 3. Stir in the minced garlic and chopped red bell pepper, cook for another 2 minutes.
  4. 4. Add the rinsed quinoa, vegetable broth, smoked paprika, and cumin. Bring to a boil.
  5. 5. Reduce heat to low, cover, and simmer for 15 minutes.
  6. 6. Stir in the frozen peas and cook for an additional 5 minutes, until the quinoa is tender and the liquid is absorbed.
  7. 7. Remove from heat, stir in the lemon juice, and season with salt and pepper to taste.
  8. 8. Fluff with a fork and serve warm.
