In a large skillet, cook sausage over medium heat until browned. Remove sausage and set aside.
In the same skillet, add onion and celery. Cook until softened.
Add apples, chicken broth, sage, thyme, salt, and pepper. Stir to combine.
In a large bowl, combine sausage, bread cubes, and apple mixture. Toss to combine.
Transfer to a greased baking dish. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes, or until top is golden brown.
