Saskatoon Berry Serviceberry Pie Recipe

Pie Filling
- 4 cups Saskatoon berries
- 1 cup sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch
Pie Crust
- 2 cups all-purpose flour
- 1 cup butter cold and cubed
- ¼ cup ice water
- 1 teaspoon salt
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine Saskatoon berries, sugar, lemon juice, and cornstarch. Set aside.
In another bowl, mix flour and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Gradually add ice water, mixing until the dough comes together.
Roll out half of the dough and place it in a pie dish. Add the berry mixture.
Roll out the remaining dough and place it over the filling. Seal and crimp the edges. Cut a few slits in the top crust to allow steam to escape.
Bake for 45 minutes or until the crust is golden brown and the filling is bubbly.
Let the pie cool before serving.
