  • ¼ cup granola

Instructions 

  1. In a saucepan, combine rhubarb and sugar. Cook over medium heat until rhubarb is soft, about 10 minutes. Let cool.
  2. In a mixing bowl, whisk together the whipped cream, Greek yogurt, and vanilla extract.
  3. Layer the rhubarb mixture, cream mixture, and granola in serving glasses. Repeat layers.
  4. Chill in the refrigerator for at least 1 hour before serving.
