Ingredients 

Main Ingredients

  • 1 cup Unsalted butter softened
  • 1 cup Granulated sugar
  • 2 teaspoon Vanilla extract
  • 2 cups All-purpose flour
  • 1 cup Almond flour
  • ½ teaspoon Salt
  • ½ cup Raspberry jam
  • 0.25 cup Powdered sugar for dusting

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. Cream the butter and sugar together until light and fluffy. Add vanilla extract.
  3. In a separate bowl, whisk together all-purpose flour, almond flour, and salt. Gradually add to the butter mixture.
  4. Roll out the dough to about ¼ inch thickness. Cut out cookies using a round cookie cutter. Cut out a smaller shape in the center of half of the cookies.
  5. Place cookies on a baking sheet and bake for 10-12 minutes, or until edges are golden brown.
  6. Let cookies cool completely. Spread raspberry jam on the whole cookies and top with the cut-out cookies. Dust with powdered sugar.
