Crust
- ½ cup butter softened
- 3 oz cream cheese softened
- 1 cup all-purpose flour
Filling
- 1 cup brown sugar packed
- 1 tablespoon butter melted
- 1 teaspoon vanilla extract
- 1 egg beaten
- 1 cup pecans chopped
Preheat oven to 350°F (175°C).
In a mixing bowl, cream together butter and cream cheese until smooth.
Gradually add flour and mix until a dough forms.
Shape dough into 1-inch balls and press into mini muffin tin to form a crust.
In another bowl, mix together brown sugar, melted butter, vanilla, and beaten egg until well combined.
Stir in chopped pecans.
Spoon filling into each crust.
Bake for 20-25 minutes or until filling is set.
Allow to cool before removing from tin.
