  • 4 pieces Chicken Breasts boneless, skinless
  • 2 cups Mixed Vegetables chopped
  • 2 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper freshly ground

Instructions 

  1. Preheat your oven to 400°F (200°C).
  2. Cut four large pieces of parchment paper.
  3. Place one chicken breast in the center of each piece of parchment paper.
  4. Divide the mixed vegetables evenly among the four pieces of parchment paper, placing them around the chicken.
  5. Drizzle olive oil over the chicken and vegetables. Season with salt and pepper.
  6. Fold the parchment paper over the chicken and vegetables, crimping the edges to seal the packets.
  7. Place the packets on a baking sheet and bake for 25 minutes.
  8. Carefully open the packets to release the steam before serving.
