Lentil Salad Recipe
A refreshing and nutritious lentil salad, perfect for any meal.

Main Ingredients
- 1 cup Lentils rinsed
- 2 cups Water
- 1 cup Cherry Tomatoes halved
- 1 Cucumber diced
- ¼ cup Red Onion finely chopped
- ¼ cup Olive Oil
- 2 tablespoon Lemon Juice freshly squeezed
- 1 teaspoon Salt to taste
- ½ teaspoon Black Pepper freshly ground
- ¼ cup Fresh Parsley chopped
1. In a saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender. Drain and let cool.
2. In a large mixing bowl, combine cooked lentils, cherry tomatoes, cucumber, and red onion.
3. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour over the salad and toss to combine.
4. Garnish with fresh parsley before serving.
