Ingredients 

Main Ingredients

  • 1 cup Lentils rinsed
  • 2 cups Water
  • 1 cup Cherry Tomatoes halved
  • 1 Cucumber diced
  • ¼ cup Red Onion finely chopped
  • ¼ cup Olive Oil
  • 2 tablespoon Lemon Juice freshly squeezed
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper freshly ground
  • ¼ cup Fresh Parsley chopped

Instructions 

  1. 1. In a saucepan, combine lentils and water. Bring to a boil, then reduce heat and simmer for 20 minutes or until lentils are tender. Drain and let cool.
  2. 2. In a large mixing bowl, combine cooked lentils, cherry tomatoes, cucumber, and red onion.
  3. 3. In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper. Pour over the salad and toss to combine.
  4. 4. Garnish with fresh parsley before serving.
