Ingredients 

Main Ingredients

  • 1 lb chicken breast, diced
  • 1 lb andouille sausage, sliced
  • 1 lb shrimp, peeled and deveined
  • 1 cup onion, diced
  • 1 cup green bell pepper, diced
  • 1 cup celery, diced
  • 3 cloves garlic, minced
  • 2 cups long-grain rice
  • 4 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 teaspoon Cajun seasoning
  • 1 teaspoon dried thyme
  • 2 pcs bay leaves
  • to taste Salt and pepper

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chicken and sausage, cook until browned.
  2. 2. Add the onion, bell pepper, and celery. Cook until softened.
  3. 3. Stir in the garlic, rice, Cajun seasoning, thyme, and bay leaves. Cook for a minute.
  4. 4. Pour in the chicken broth and tomatoes. Bring to a boil, then reduce heat and simmer for 20-25 minutes.
  5. 5. Add the shrimp and cook until pink, about 5 minutes. Season with salt and pepper to taste.
