  • 1 unit red bell pepper sliced
  • 1 unit yellow bell pepper sliced
  • 1 unit zucchini sliced
  • 1 unit eggplant sliced
  • 1 unit red onion sliced
  • 2 tablespoon olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste

Instructions 

  1. Preheat grill to medium-high heat.
  2. Slice all vegetables into even pieces.
  3. Toss vegetables with olive oil, salt, pepper, oregano, and garlic powder.
  4. Grill vegetables for about 5-7 minutes per side until tender and charred.
  5. Serve warm.
