Gooseberry Tart Recipe
A delightful tart made with fresh gooseberries.

Tart Crust
- 1.5 cups all-purpose flour
- 0.5 cup unsalted butter cold, cubed
- 2 tablespoon sugar
- 1 pinch salt
- 3 tablespoon cold water
Filling
- 4 cups gooseberries fresh or frozen
- 1 cup sugar
- 2 tablespoon cornstarch
- 1 teaspoon vanilla extract
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine flour, sugar, and salt. Cut in the cold butter until the mixture resembles coarse crumbs. Add cold water, one tablespoon at a time, until the dough comes together.
Press the dough into a tart pan. Prick the bottom with a fork and bake for 15 minutes.
In another bowl, mix gooseberries, sugar, cornstarch, and vanilla extract. Pour into the partially baked crust.
Bake for an additional 25 minutes, or until the filling is bubbly and the crust is golden brown. Let cool before serving.
