Garlic Parmesan Spaghetti Squash
A delicious and healthy alternative to traditional pasta, featuring spaghetti squash with garlic and Parmesan.

Main Ingredients
- 1 large spaghetti squash
- 2 tablespoon olive oil
- 4 cloves garlic, minced
- ½ cup grated Parmesan cheese
- to taste salt and pepper
- 2 tablespoon chopped fresh parsley optional
Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and scoop out the seeds.
Drizzle the cut sides of the squash with olive oil and season with salt and pepper. Place cut-side down on a baking sheet.
Roast in the preheated oven for about 40 minutes, or until the squash is tender and easily pierced with a fork.
Remove from the oven and let cool slightly. Use a fork to scrape the squash into strands.
In a pan, heat the remaining olive oil over medium heat. Add the minced garlic and cook until fragrant, about 1 minute.
Add the spaghetti squash strands to the pan and toss to coat with the garlic and oil. Stir in the Parmesan cheese.
Season with additional salt and pepper if needed. Garnish with chopped parsley if desired. Serve warm.
