  • 1 cup jasmine rice
  • 2 cups coconut milk
  • ½ cup sugar
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • ¼ cup shredded coconut optional

Instructions 

  1. Rinse the rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rice, coconut milk, sugar, and salt.
  3. Bring to a boil over medium heat, then reduce to a simmer.
  4. Cook, stirring occasionally, until the rice is tender and the mixture is thickened, about 30 minutes.
  5. Stir in the vanilla extract.
  6. Serve warm or chilled, topped with shredded coconut if desired.
