Dairy-Free Coconut Rice Pudding Recipe
A creamy, dairy-free dessert made with coconut milk and jasmine rice.

Main Ingredients
- 1 cup jasmine rice
- 2 cups coconut milk
- ½ cup sugar
- ¼ teaspoon salt
- 1 teaspoon vanilla extract
- ¼ cup shredded coconut optional
Rinse the rice under cold water until the water runs clear.
In a medium saucepan, combine the rice, coconut milk, sugar, and salt.
Bring to a boil over medium heat, then reduce to a simmer.
Cook, stirring occasionally, until the rice is tender and the mixture is thickened, about 30 minutes.
Stir in the vanilla extract.
Serve warm or chilled, topped with shredded coconut if desired.
