Ingredients

  • 1 cup Butter softened
  • 2 cups Sugar
  • 4 Eggs large
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Coconut Extract
  • 2 cups All-Purpose Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoon Salt
  • 1 cup Coconut Milk
  • 1 cup Shredded Coconut

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
  2. In a large mixing bowl, cream the butter and sugar until light and fluffy.
  3. Add the eggs one at a time, beating well after each addition. Stir in the vanilla and coconut extracts.
  4. In another bowl, combine the flour, baking powder, and salt. Gradually add to the creamed mixture alternately with coconut milk, beating well after each addition.
  5. Fold in the shredded coconut. Pour the batter into the prepared loaf pan.
  6. Bake for 60 minutes or until a toothpick inserted into the center comes out clean. Cool in the pan for 10 minutes before removing to a wire rack to cool completely.
