  • 1 can Chickpeas drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Garlic Powder
  • 0.5 teaspoon Salt
  • 8 pieces Taco Shells

Toppings

  • 1 cup Shredded Lettuce
  • 1 cup Diced Tomatoes
  • 0.5 cup Sour Cream
  • 0.5 cup Shredded Cheese

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the chickpeas, cumin, paprika, garlic powder, and salt. Cook for 5-7 minutes, stirring occasionally.
  3. 3. Warm the taco shells according to package instructions.
  4. 4. Fill each taco shell with the chickpea mixture and top with shredded lettuce, diced tomatoes, sour cream, and shredded cheese.
