Ingredients 

Main Ingredients

  • 4 pieces Chicken Breasts boneless, skinless
  • 2 large Eggs
  • ½ cup All-Purpose Flour
  • ¼ cup Olive Oil
  • ¼ cup Butter unsalted
  • ½ cup Chicken Broth low sodium
  • ¼ cup Lemon Juice freshly squeezed
  • 2 tablespoon Parsley chopped
  • to taste Salt
  • to taste Black Pepper freshly ground

Instructions 

  1. 1. Pound the chicken breasts to an even thickness.
  2. 2. Season the flour with salt and pepper, then dredge the chicken in the flour.
  3. 3. Beat the eggs in a bowl. Dip the floured chicken into the eggs.
  4. 4. Heat the olive oil in a skillet over medium heat. Cook the chicken until golden brown on both sides.
  5. 5. Remove the chicken and set aside. In the same skillet, melt the butter and add the chicken broth and lemon juice.
  6. 6. Return the chicken to the skillet and simmer for a few minutes until the sauce thickens.
  7. 7. Garnish with chopped parsley and serve hot.
