Ingredients

  • 1 cup quinoa rinsed
  • 2 cups water
  • 1 cup carrots grated
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper freshly ground
  • 2 tablespoons fresh parsley chopped

Instructions 

  1. 1. Rinse the quinoa under cold water.
  2. 2. In a saucepan, bring the water to a boil. Add the quinoa and a pinch of salt. Reduce the heat to low, cover, and simmer for 15 minutes.
  3. 3. Remove the saucepan from heat and let it sit, covered, for 5 minutes. Fluff the quinoa with a fork.
  4. 4. In a large bowl, combine the cooked quinoa, grated carrots, olive oil, salt, pepper, and chopped parsley. Mix well.
  5. 5. Serve warm or at room temperature.
