Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, grated
  • 1 lb Carrots, peeled and chopped
  • 4 cups Vegetable broth
  • to taste Salt and pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add garlic and ginger, cook for another 2 minutes.
  4. Add carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.
  5. Blend the soup until smooth using a blender. Be careful with the hot liquid.
  6. Season with salt and pepper to taste. Serve hot.
