Carrot Ginger Soup
A warm, comforting soup with a hint of ginger.

Main Ingredients
- 1 tablespoon Olive oil
- 1 medium Onion, chopped
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, grated
- 1 lb Carrots, peeled and chopped
- 4 cups Vegetable broth
- to taste Salt and pepper
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add garlic and ginger, cook for another 2 minutes.
Add carrots and vegetable broth. Bring to a boil, then reduce heat and simmer until carrots are tender, about 20 minutes.
Blend the soup until smooth using a blender. Be careful with the hot liquid.
Season with salt and pepper to taste. Serve hot.
