Ingredients 

Main Ingredients

  • 1 cup Rolled oats
  • 1 cup Milk
  • 1 cup All-purpose flour
  • ½ cup Brown sugar
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt
  • 1 Egg beaten
  • ¼ cup Vegetable oil
  • 1 cup Blueberries fresh or frozen

Instructions 

  1. Preheat your oven to 400°F (200°C). Grease a muffin tin or line with paper muffin liners.
  2. In a mixing bowl, combine the oats and milk. Let stand for 5 minutes.
  3. In another bowl, mix together the flour, brown sugar, baking powder, baking soda, and salt.
  4. Add the egg and oil to the oat mixture and stir until combined.
  5. Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the blueberries.
  6. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  7. Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
