Ingredients 

Crust

  • 1.5 cups graham cracker crumbs
  • 0.5 cup melted butter
  • 0.25 cup sugar

Filling

  • 24 oz cream cheese softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs
  • 1 cup sour cream

Topping

  • 2 cups sliced apples
  • 2 tablespoon sugar
  • 1 teaspoon cinnamon

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add vanilla and eggs one at a time, mixing well after each. Stir in sour cream.
  4. Pour filling over crust. Bake for 50-60 minutes, until center is set. Cool.
  5. In a small bowl, toss apples with sugar and cinnamon. Arrange on top of cheesecake.
