  • 1 large egg beaten
  • ¼ cup milk
  • 2 tablespoon olive oil for frying

Instructions 

  1. Grate the zucchini and squeeze out excess moisture.
  2. In a mixing bowl, combine flour, baking powder, and salt.
  3. Add beaten egg and milk to the dry ingredients and mix well.
  4. Fold in the grated zucchini.
  5. Heat olive oil in a frying pan over medium heat.
  6. Spoon batter into the pan and flatten slightly. Cook until golden brown on both sides.
  7. Drain on paper towels and serve warm.
