  • 2 cups Zucchini, grated
  • 1 cup Corn kernels fresh or frozen
  • ½ cup All-purpose flour
  • 1 large Egg beaten
  • ¼ cup Green onions chopped
  • ¼ cup Parmesan cheese grated
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper
  • 2 tablespoon Olive oil for frying

Instructions 

  1. 1. Grate the zucchini and squeeze out excess moisture.
  2. 2. In a mixing bowl, combine zucchini, corn, flour, egg, green onions, Parmesan, salt, and pepper.
  3. 3. Heat olive oil in a frying pan over medium heat.
  4. 4. Scoop spoonfuls of the mixture into the pan and flatten slightly. Cook until golden brown, about 3-4 minutes per side.
  5. 5. Drain on paper towels and serve warm.
