Zucchini Corn Fritters

Main Ingredients
- 2 cups Zucchini, grated
- 1 cup Corn kernels fresh or frozen
- ½ cup All-purpose flour
- 1 large Egg beaten
- ¼ cup Green onions chopped
- ¼ cup Parmesan cheese grated
- ½ teaspoon Salt
- ¼ teaspoon Black pepper
- 2 tablespoon Olive oil for frying
1. Grate the zucchini and squeeze out excess moisture.
2. In a mixing bowl, combine zucchini, corn, flour, egg, green onions, Parmesan, salt, and pepper.
3. Heat olive oil in a frying pan over medium heat.
4. Scoop spoonfuls of the mixture into the pan and flatten slightly. Cook until golden brown, about 3-4 minutes per side.
5. Drain on paper towels and serve warm.
