Ingredients

  • 1 ½ cups grated zucchini
  • 1 cup all-purpose flour
  • ½ cup cocoa powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup vegetable oil
  • 1 cup granulated sugar
  • 2 teaspoon vanilla extract
  • ½ cup chocolate chips optional

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9x9 inch baking pan.
  2. In a large bowl, mix together the oil, sugar, and vanilla until well blended.
  3. In another bowl, combine the flour, cocoa, baking soda, and salt.
  4. Stir the dry ingredients into the wet mixture. Fold in the zucchini and chocolate chips.
  5. Spread evenly into the prepared pan.
  6. Bake for 25 minutes, or until brownies spring back when gently touched.
  7. Let cool before cutting into squares.
