Main Ingredients
- 4 zucchinis medium-sized, halved lengthwise and scooped out
- 1 cup cooked quinoa
- 1 cup cherry tomatoes halved
- 1 cup shredded mozzarella cheese
- 2 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 0.5 teaspoon black pepper
Preheat oven to 375°F (190°C).
Place zucchini halves in a baking dish.
In a mixing bowl, combine quinoa, cherry tomatoes, mozzarella, garlic, olive oil, salt, and pepper.
Spoon the mixture into the zucchini halves.
Bake for 25 minutes or until zucchini is tender and cheese is melted.
