Ingredients

  • 2 cups Grated Zucchini
  • 1 cup Sugar
  • 1 cup Vegetable Oil
  • 2 teaspoon Vanilla Extract
  • 2 cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 teaspoon Ground Cinnamon
  • 0.5 teaspoon Salt

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large mixing bowl, combine grated zucchini, sugar, oil, and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, cinnamon, and salt.
  4. Gradually add dry ingredients to the zucchini mixture and stir until well combined.
  5. Pour the batter into a greased baking pan.
  6. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.
  7. Let cool before cutting into bars.
