Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 cans white beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups kale, chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute.
  4. Add the white beans, vegetable broth, dried thyme, salt, and black pepper. Bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add the chopped kale and cook for another 5 minutes, until wilted.
  7. Serve hot and enjoy!
