Main Ingredients
- 225 g self-raising flour
- 110 g salted butter cold
- 85 g caster sugar
- 50 g currants
- 1 egg beaten
- 1 pinch mixed spice
- 1 splash milk if needed
Rub the butter into the flour until it resembles breadcrumbs.
Add the sugar, currants, and mixed spice.
Mix in the egg to form a dough. Add a splash of milk if the dough is too dry.
Roll out the dough to about ¼ inch thick and cut into rounds.
Cook on a lightly greased griddle or frying pan over medium heat for about 3 minutes on each side, until golden brown.
