Ingredients 

Main Ingredients

  • 225 g self-raising flour
  • 110 g salted butter cold
  • 85 g caster sugar
  • 50 g currants
  • 1 egg beaten
  • 1 pinch mixed spice
  • 1 splash milk if needed

Instructions 

  1. Rub the butter into the flour until it resembles breadcrumbs.
  2. Add the sugar, currants, and mixed spice.
  3. Mix in the egg to form a dough. Add a splash of milk if the dough is too dry.
  4. Roll out the dough to about ¼ inch thick and cut into rounds.
  5. Cook on a lightly greased griddle or frying pan over medium heat for about 3 minutes on each side, until golden brown.
