Watermelon Gazpacho
A refreshing summer soup made with watermelon, cucumber, and a hint of spice.

Main Ingredients
- 4 cups Watermelon, cubed
- 1 cup Cucumber, diced
- 0.25 cup Red onion, diced
- 1 clove Garlic, minced
- 2 tablespoons Olive oil
- 2 tablespoons Red wine vinegar
- 1 teaspoon Salt
- 0.5 teaspoon Black pepper
- 0.25 cup Fresh basil, chopped
1. In a blender, combine watermelon, cucumber, red onion, and garlic. Blend until smooth.
2. Add olive oil, red wine vinegar, salt, and black pepper. Blend again until well mixed.
3. Chill in the refrigerator for at least 1 hour before serving.
4. Serve cold, garnished with fresh basil.
