Instructions
1. Heat olive oil in a pan over medium heat.
2. Add shredded carrots, cabbage, and bell pepper strips. Stir-fry for 5 minutes.
3. Add soy sauce and cook for another 2 minutes.
4. Remove from heat and let the mixture cool slightly.
5. Place a small amount of the veggie mixture on each spring roll wrapper and roll tightly.
6. Serve immediately or refrigerate for later.
