Ingredients 

Main Ingredients

  • 2 tablespoon Vegetable Oil
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 2 cups Mixed Vegetables (carrots, peas, potatoes), chopped
  • 1 cup Coconut Milk
  • 1 cup Tomato Puree
  • 1 teaspoon Garam Masala
  • 1 teaspoon Turmeric
  • 1 teaspoon Cumin
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Heat the oil in a large pot over medium heat. Add the chopped onions and cook until translucent.
  2. Add the minced garlic and ginger. Cook for another 2 minutes.
  3. Add the mixed vegetables and cook for 5 minutes.
  4. Stir in the coconut milk, tomato puree, garam masala, turmeric, and cumin. Bring to a simmer.
  5. Reduce the heat and let it cook for 20 minutes, or until the vegetables are tender.
  6. Season with salt and black pepper to taste. Serve hot.
