  • 1 cup Bell Peppers, sliced
  • 1 cup Onions, sliced
  • 1 cup Zucchini, diced
  • 1 cup Corn kernels
  • 1 tablespoon Olive oil
  • 1 teaspoon Chili powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • 8 pieces Taco shells

Instructions 

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the bell peppers, onions, zucchini, and corn. Cook until tender, about 5-7 minutes.
  3. Stir in the chili powder, cumin, and salt. Cook for another 2 minutes.
  4. Warm the taco shells according to package instructions.
  5. Fill the taco shells with the vegetable mixture and serve.
