Main Ingredients
- 2 cups Carrots, chopped
- 2 cups Potatoes, diced
- 1 cup Onions, chopped
- 1 cup Celery, chopped
- 4 cups Vegetable broth
- 2 cloves Garlic, minced
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 teaspoon Thyme
1. Heat a large pot over medium heat. Add a bit of oil.
2. Add onions, garlic, and celery. Cook until softened.
3. Add carrots and potatoes. Cook for a few more minutes.
4. Pour in vegetable broth. Bring to a boil.
5. Reduce heat and simmer for about 30 minutes, until vegetables are tender.
6. Season with salt, pepper, and thyme. Serve hot.
