Ingredients 

Main Ingredients

  • 2 cups Carrots, chopped
  • 2 cups Potatoes, diced
  • 1 cup Onions, chopped
  • 1 cup Celery, chopped
  • 4 cups Vegetable broth
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Thyme

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil.
  2. 2. Add onions, garlic, and celery. Cook until softened.
  3. 3. Add carrots and potatoes. Cook for a few more minutes.
  4. 4. Pour in vegetable broth. Bring to a boil.
  5. 5. Reduce heat and simmer for about 30 minutes, until vegetables are tender.
  6. 6. Season with salt, pepper, and thyme. Serve hot.
