Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 Carrots, sliced
  • 2 Celery Stalks, sliced
  • 3 cups Vegetable Broth
  • 1 cup Diced Tomatoes
  • 1 cup Green Beans, chopped
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 teaspoon Dried Thyme
  • 1 cup Frozen Peas

Instructions 

  1. 1. Heat the olive oil in a large pot over medium heat.
  2. 2. Add the onion, carrots, and celery. Cook until softened, about 5 minutes.
  3. 3. Pour in the vegetable broth and diced tomatoes. Bring to a boil.
  4. 4. Add the green beans, salt, pepper, and thyme. Reduce heat and simmer for 20 minutes.
  5. 5. Stir in the frozen peas and cook for another 5 minutes.
  6. 6. Serve hot and enjoy!
