  • 4 slices Bread Whole grain or sourdough
  • 1 cup Bell Peppers Sliced
  • 1 cup Zucchini Sliced
  • 1 cup Spinach Fresh
  • 2 tablespoon Pesto
  • 2 slices Mozzarella Cheese

Instructions 

  1. 1. Preheat the panini press.
  2. 2. Spread pesto on one side of each bread slice.
  3. 3. Layer the vegetables and cheese on two slices of bread.
  4. 4. Top with the remaining bread slices, pesto side down.
  5. 5. Place the sandwiches in the panini press and cook for 5-7 minutes, until the bread is golden and the cheese is melted.
  6. 6. Serve hot.
