Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 cup green beans, chopped
  • 1 cup peas
  • 1.5 cups short-grain rice
  • 4 cups vegetable broth
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon saffron threads soaked in 2 tablespoon warm water
  • to taste salt and pepper
  • 1 lemon, cut into wedges for serving

Instructions 

  1. Heat olive oil in a large skillet or paella pan over medium heat.
  2. Add chopped onion and garlic, and sauté until softened.
  3. Add bell peppers and green beans, and cook for another 5 minutes.
  4. Stir in the rice, vegetable broth, smoked paprika, and saffron (with soaking water).
  5. Bring to a boil, then reduce heat and simmer uncovered for about 20 minutes, or until the rice is cooked and the liquid is absorbed.
  6. Add peas and cook for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve with lemon wedges on the side.
