  • 1 cup Orzo
  • 1 cup Cherry Tomatoes, halved
  • 1 cup Cucumber, diced
  • ¼ cup Red Onion, finely chopped
  • ¼ cup Feta Cheese, crumbled
  • 2 tablespoon Olive Oil
  • 1 tablespoon Lemon Juice
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper

Instructions 

  1. 1. Cook the orzo according to package instructions. Drain and set aside to cool.
  2. 2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, and feta cheese.
  3. 3. Add the cooled orzo to the bowl with the vegetables and mix well.
