Ingredients 

Main Ingredients

  • 6 eggs
  • 1 cup chopped bell peppers any color
  • 1 cup chopped spinach fresh
  • ½ cup chopped onions
  • ½ cup grated cheese cheddar or mozzarella
  • 1 tablespoon olive oil
  • ½ teaspoon salt or to taste
  • ¼ teaspoon black pepper or to taste

Instructions 

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, whisk the eggs with salt and pepper.
  3. Heat olive oil in an oven-safe skillet over medium heat. Add onions and bell peppers, cook until softened.
  4. Add spinach to the skillet and cook until wilted.
  5. Pour the egg mixture over the vegetables in the skillet. Sprinkle grated cheese on top.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the eggs are set.
  7. Remove from the oven and let it cool slightly before slicing and serving.
