Ingredients 

Main Ingredients

  • 1 cup farro
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup feta cheese, crumbled
  • 2 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh parsley, chopped

Instructions 

  1. 1. Rinse the farro under cold water. In a large pot, combine farro and water. Bring to a boil, then reduce heat and simmer for about 30 minutes or until farro is tender. Drain and let cool.
  2. 2. In a large mixing bowl, combine the cooked farro, cherry tomatoes, cucumber, red onion, and feta cheese.
  3. 3. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper. Pour over the salad and toss to combine.
  4. 4. Garnish with fresh parsley before serving. Enjoy!
