Ingredients

  • 1 cup Couscous
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • ¼ cup Red onion, finely chopped
  • ¼ cup Fresh parsley, chopped
  • 2 tablespoon Olive oil
  • 1 tablespoon Lemon juice
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. 1. Cook the couscous according to package instructions and let it cool.
  2. 2. In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, and parsley.
  3. 3. Add the cooled couscous to the bowl and mix well.
  4. 4. Drizzle with olive oil and lemon juice, then season with salt and black pepper. Toss to combine.
  5. 5. Serve immediately or refrigerate for later.
