Ingredients 

Main Ingredients

  • 1 cup Couscous
  • 1 cup Vegetable broth
  • 1 Carrot, diced
  • 1 Zucchini, diced
  • 1 Red bell pepper, diced
  • 1 tablespoon Olive oil
  • 1 teaspoon Salt to taste
  • 0.5 teaspoon Black pepper to taste
  • 0.25 cup Chopped parsley optional

Instructions 

  1. 1. In a saucepan, bring the vegetable broth to a boil.
  2. 2. Stir in the couscous, cover, and remove from heat. Let it sit for 5 minutes.
  3. 3. In a mixing bowl, combine the diced carrot, zucchini, and red bell pepper.
  4. 4. Fluff the couscous with a fork and add it to the vegetables.
  5. 5. Drizzle with olive oil, season with salt and pepper, and mix well.
  6. 6. Garnish with chopped parsley if desired. Serve warm or at room temperature.
