Ingredients 

Main Ingredients

  • 2 cups Basmati rice rinsed and soaked for 30 minutes
  • 1 cup Mixed vegetables carrots, peas, beans, potatoes
  • 2 tablespoon Ghee or oil
  • 1 large Onion thinly sliced
  • 2 cloves Garlic minced
  • 1 inch Ginger grated
  • 2 cups Water
  • to taste Salt
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin seeds
  • 1 teaspoon Garam masala
  • 1 cup Yogurt optional
  • 1 handful Cilantro chopped, for garnish

Instructions 

  1. 1. Heat ghee or oil in a large pot over medium heat. Add cumin seeds and let them splutter.
  2. 2. Add sliced onions and sauté until golden brown.
  3. 3. Add minced garlic and grated ginger, sauté for another minute.
  4. 4. Add mixed vegetables, turmeric powder, and salt. Cook for 5-7 minutes.
  5. 5. Add soaked rice and water. Bring to a boil.
  6. 6. Reduce heat, cover, and simmer for 20 minutes or until rice is cooked.
  7. 7. Stir in garam masala and yogurt (if using). Garnish with chopped cilantro.
