Ingredients

  • 1 cup Grated Zucchini squeezed to remove excess water
  • 1.5 cups All-Purpose Flour
  • 1 cup Sugar
  • 1 teaspoon Baking Soda
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Salt
  • 0.5 cup Vegetable Oil
  • 2 teaspoon Vanilla Extract
  • 0.25 cup Non-Dairy Milk

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a large mixing bowl, combine the flour, sugar, baking soda, cinnamon, and salt.
  3. In another bowl, mix the grated zucchini, vegetable oil, vanilla extract, and non-dairy milk.
  4. Combine the wet and dry ingredients, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
