Ingredients 

Main Ingredients

  • 1 cup Vegan Butter softened
  • 1.5 cups Sugar
  • 1 tablespoon Ground Flaxseed
  • 3 tablespoon Water
  • 2.5 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 2 teaspoon Cream of Tartar
  • 0.5 teaspoon Salt
  • 2 teaspoon Ground Cinnamon for coating
  • 0.25 cup Sugar for coating

Instructions 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small bowl, mix the ground flaxseed with water and let it sit for a few minutes to thicken.
  3. In a large mixing bowl, cream together the vegan butter and 1.5 cups of sugar until light and fluffy.
  4. Add the flaxseed mixture to the butter and sugar, and mix well.
  5. In another bowl, whisk together the flour, baking soda, cream of tartar, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. In a small bowl, mix the 2 teaspoon of cinnamon with 0.25 cup of sugar.
  8. Roll the dough into 1-inch balls, then roll each ball in the cinnamon-sugar mixture to coat.
  9. Place the coated dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  10. Bake for 8-10 minutes, or until the edges are lightly golden. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
