Aquafaba (liquid from a can of chickpeas)

Instructions
Preheat your oven to 250°F (120°C) and line a baking sheet with parchment paper.
In a large bowl, use an electric mixer to beat the aquafaba and cream of tartar until soft peaks form.
Gradually add the sugar, a tablespoon at a time, while continuing to beat the mixture until stiff peaks form.
Beat in the vanilla extract.
Transfer the mixture to a piping bag and pipe small mounds onto the prepared baking sheet.
Bake for 1.5 hours, then turn off the oven and let the meringues cool inside the oven for another hour.
