A delicious and healthy vegan twist on the classic Caesar salad.

Salad Ingredients
- 1 head Romaine lettuce chopped
- 1 cup Croutons
Dressing Ingredients
- ½ cup Cashews soaked
- ¼ cup Nutritional yeast
- 2 tablespoon Lemon juice freshly squeezed
- 1 tablespoon Dijon mustard
- 1 clove Garlic minced
- ½ cup Water
- to taste Salt and pepper
1. In a blender, combine all dressing ingredients and blend until smooth.
2. In a large mixing bowl, toss the chopped romaine lettuce with the dressing until evenly coated.
3. Add croutons and toss again.
4. Serve immediately and enjoy!
