Instructions
Preheat your oven to 350°F (175°C) and grease a muffin tin.
In a large mixing bowl, whisk together the mashed bananas, melted coconut oil, sugar, and vanilla extract.
Add the flour, baking soda, and salt to the wet ingredients and mix until just combined.
Divide the batter evenly among the muffin cups.
Bake for 20 minutes, or until a toothpick inserted into the center comes out clean.
Let the muffins cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
